Today I made the second batch of these delicious biscuits for the weekend. We ate the first batch with ham and I will use this batch for breakfast next week. I like to make several kinds up ahead of time and freeze them. They freeze well. I like to put things like egg and cheese, ham, bacon, etc. and make them up and wrap them individually in wax paper. Then I wrap in a layer of foil. I then place all of them in a large freezer Ziploc bag and freeze. I really enjoy having these to make a quick breakfast. Just take it out and heat at 30 sec increments until warm enough to serve. No mess, No clean up and you have a yummy breakfast.
I usually shop at Trader Joe's. The bacon doesn't have nitrates and they offer a lot of organic items. Everything is very reasonably priced and top quality. I used their unbleached flour, and their chemical free baking powder, and hormone free butter. On the first batch I used cream instead of milk. That worked well and I could taste a richer flavor in the end result. I usually use organic milk and did this on the second batch. This recipe turns out great every time. I usually make them the old fashioned way and mix by hand. On the batch I made today I used my food processor and I will do that from now on. It is so much easier.
Baking Powder Biscuits
2 cups all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
6 tablespoons cold butter
3/4 cup milk
Mix all of the dry ingredients in the food processor and then add the sliced butter. Pulse until the mixture forms pea sized balls. Then gradually add the milk until the dough forms a ball. (this will be only a few pulses on the machine) Turn onto a floured surface and roll out with a rolling pin. I have used a glass to cut out the nice round shapes for many years but I picked up a set of round cookie cutters at the gourmet kitchen shop last month. I love this set and found them much easier to work with the dough! Let the biscuits rise for about 10 minutes and brush the tops with a small amount of melted butter. Cook for 18 minutes on 375. Or until the tops are brown. If you plan on freezing these for later use, I usually take them out when they are lightly browned. Enjoy!!
