Hello Everyone! This is my first opportunity to post in a few days. My mother has had another treatment and I am spending time with her and family. I drove the RV down and parked it in their back yard. It has really been nice to get to see how it feels to actually use the RV. I have everything I need in my little home on wheels. I can go back over there anytime I need anything and I decided to sleep in there at night so I can see how I like it spending time in it. I love it! The previous owners thought of everything. I have a built in blow dryer, mirrors, clocks, tv's and cooking equipment, a bathroom with great water pressure, and a small full kitchen with stove/oven/microwave,queen bed & really everything I need! This is perfect since I am back and forth right now taking care of things in Raleigh and at my Mom's. I won't have to keep packing my suitcase.
My Mother had a great report from the Dr. this week. Her chemo treatments are working! The Dr. wants to continue with more treatments since her body is responding so well to these treatments. We feel that she could possibly go in remission very soon!! Thank you for your prayers. They are powerful. She has been doing remarkably well. Last night she started getting weaker and now she is not able to eat or get out of bed. This usually happens about this time & last about a week after the treatment. Then after that week each day she gets a little stronger and better until she starts feeling better and able to enjoy talking on the phone and visitors again. I am thankful I can be here to help. I enjoy being spending time with her and seeing family and friends also.
My Aunt Diane from Tennessee came to spend time with Mom. It was wonderful to spend some quality time with her. On the day my mother had her chemo treatment, my Aunt Diane and I went out and got some neat things for my RV. Space is very limited so I want to make sure I make the most of it. I purchased some new Wilton Silicone bakeware. I can use this in the microwave or oven. This is easy to store and very lightweight. I purchased some collapsible storage items, and some other neat gadgets. My Aunt Diane said my Mother mentioned she had a taste for old fashioned Banana pudding. She asked if I would make her one. So I did. I love to cook. I made it when we got home that night. We all enjoyed it that night before my mother had her next treatment and was able to eat it. Even my Dad enjoyed it. He usually doesn't like sweets but he ate!
Southern Style Banana Pudding
Banana Pudding
1 + 4 tbsp. granulated Sugar
1/2 cup all-purpose flour
1/2 teaspoon salt
1/4 tsp cream of tartar
2 cups evaporated milk
1 1/2 teaspoon pure vanilla extract (use the best you can find)
1 tablespoon butter (not margarine)
4 egg yolks (large eggs or better) Save egg whites for later
box of Vanilla wafers
4-5 ripe bananas
Preheat oven to 375°F.
Line the bottom of a 9" x 9" baking dish with a layer of vanilla wafers. This recipe will not use the whole box but you won't have very many left! Peel the bananas and slice into thin slices and layer over the wafers. My mother likes to sprinkle a little lemon juice over the banana to keep them from getting dark. I forgot to do this but we ate it up before it had time to get dark anyway. Combine 1 cup of sugar, flour and salt in a bowl, and stir well to mix. Wisk out any flour lumps and set aside.
In a heavy saucepan, wisk the egg yolks well. Over medium heat, add the flour mixture to the egg yolks, & mix alternately with the milk stirring constantly. Bring to a gentle boil and, when the mixture begins to thicken, add the butter, continue to stir. Keep boiling and stirring until mixture reaches a nice pudding consistency. Remove from heat and add and 1 teaspoon of vanilla.
Alternate layers of banana slices, wafers & pudding in the baking dish ending with a layer of pudding. Beat egg whites on medium speed until foamy, with mixer running, sprinkle in 1/4 tsp cream of tartar. Continue to beat until the soft-peak stage, which means the peaks will bend over as you remove the beaters. Gradually add the sugar, a tablespoon at a time, and beat until stiff peaks form. Beat in 1/2 teaspoon pure vanilla.
Spread on top of the banana pudding and bake at 350°F for 12 to 15 minutes, or until lightly browned.
I have three recipes that I use. This is my favorite one. My favorite time to eat banana pudding is when it is hot and freshly made!
We also spent some time with my great Aunt Lucille. She is 95. She looks just like my grandmother Clark. I miss my Grandmother so much. When I spend time with Aunt Lucille I feel like I am spending time with Granny and I get to hear all of the family stories and see family pictures. Yesterday I asked her if she would allow me to scan copies of pictures. She thought it was a great idea and pulled out three books of information and documents that dated back as far as the 1700's of our family history on my mother's side. My Grandmother's family came in on a ship from England in the 1700's. My father's side was also from England.
I really am a North Carolina southern girl with the eastern NC accent! I will share some of those stories and old photos from time to time. I was fasinated at some of the interesting stories she told. She is the last living child of my Great Grandparent's family. I want to learn all I can from her. She is sharp and so wise. She is also in very good health. I am so thankful for her!

I would like to share a few photos of my father's flowers. He has a green thumb but only discovered it after he retired 15 yrs. ago. I gave my mother a small lemon tree for mother's day last year. He has taken such great care of it and it has 3 lemons on it right now!
