Old Fashioned Chocolate fudge! Southern Style!

Recently I had a taste for fudge. I decided to try a new recipe out of a cookbook I purchased a couple of years ago from Myrtle Beach. The name of this cookbook is "Southern Treasures". I love this book. This recipe calls for powder cocoa and I used evaporated milk.   I honestly like my tried and true recipe better than the one I made in this cookbook so I am posting it below to share with you. Enjoy!


Old Fashioned Fudge



3 cups sugar

2/3 cup cocoa

1/8 teaspoon salt

1 1/2 cups evaporated milk

1/4 cup butter

1 teaspoon vanilla extract



In large heavy saucepan stir together first three ingredients. Stir in milk, with a wooden spoon.Cook over medium heat, stirring constantly, until mixture comes to a full rolling boil.

Boil without stirring, to 234 degrees on a candy thermometer (This can take 20-30 minutes)

** you can easily test this by dropping a small bit in very cold water forms a soft ball that flattens when removed from water. If you use the candy thermometer do not allow the bulb of candy thermometer to touch the bottom of pan. Remove from heat. Add butter & vanilla. DO NOT STIR! Allow to cool at room temperature for approx. 2 to 2-1/2 hours until it gets lukewarm. Beat with a wooden spoon until fudge thickens & loses some of its gloss. This can take 15-20 minutes. Quickly spread into buttered pan and cut into squares. You may store in an air tight container if you have any left. ( this stuff is addictive)


It turned out pretty good but the richness and flavor is best in my old recipe shared above.

  2. Love your blog! Your pumpkin bread brought back some memories when I was little. My mom used to make us molasses bread. It was so good. If you come across a recipe for that, let me know.
