Welcome!

Greetings from the Carolinas!

The south is famous for hospitality and traditions. With that in mind, I would like to graciously welcome you to my Blog. Please join me while I share my passions and reminisce about life in the south.

I have finally realized that one of the keys to an amazing life is to enjoy the journey as we are working towards our goals & our dreams. Becoming a "Gamma" has been such a blessing and helped me slow down and enjoy each precious minute of my day.

Chocolate Pie is my favorite!

Chocolate Pie

2/3 cup  sugar

3 3/4 tablespoons all-purpose flour

6 egg yolks (save egg whites for topping)

3 tablespoons unsweetened cocoa powder

12  ounce can of evaporated milk

2 teaspoons vanilla extract

4 1/2 tablespoons butter

1 (9 inch) deep dish pie crust, baked and cooled

egg whites (from eggs used in filling)

1/2 cup sugar

Whisk together 2/3 cup sugar, flour, cocoa, and egg yolks in a saucepan. Stir in milk. Cook over medium heat, stirring constantly until thick.

Remove pan from heat, and add 1 teaspoon of vanilla and butter. Mix well and pour into the cooled cooked pie crust.

In a mixing bowl, beat the egg whites until peaks form. Slowly add 1/2 cup sugar, and vanilla. Beat again until stiff peaks form. Spread on op of filling.  Bake in 350 degree oven until the peaks are lightly browned. Let cool a couple of hours before serving.

Enjoy!
